Goji Berry Chicken Soup



Having tried chicken with different flavors, I've decided to go for a Chinese taste with the goji berries my friend gave me. Goji berries (枸杞 / 杞子, also called wolfberries or goji) have been used in Chinese medicine, wine and herbal tea for thousands of years. Not only is this Goji Berry Chicken Soup a good change of taste, it is considered a good health supplement.


Dried goji berries

According to traditional Chinese medicine, goji berries can help to treat diabetes and high blood pressure. They can reduce physical fatigue and dizziness. It is also believed they can protect our eyes.

Note: Goji berries could interact with some drugs. If you are using blood thinners, or taking diabetic medication or blood pressure drugs, you may want to avoid goji berries. Otherwise, goji berries are safe (when consumed in moderation, of course). [It is said that a healthy adult should consume about 20g of goji every day. A person can eat up to 30g of goji for medical purpose.]


Goji Berry Chicken Soup

This Chinese soup is easy to make, and can benefit your health in certain ways (read above). It can be served as a dinner starter, or added to cooked rice as "rice soup (泡飯)".

Goji Chicken Soup

Ingredients:
Dried goji berries: 1 tablespoon 
Chicken drumsticks: 2 
White cooking wine: 1/4 cup 
Water: 3 cups 
Shiitake mushrooms, chopped: (If you use dried shiitake mushrooms, please soak them in hot water for at least 20 minutes before you make the soup.)


Goji berries are usually dried and packaged.



Directions:

1. Marinate the chicken drumsticks in white cooking wine for about 30 minutes.  

2. Add the chicken drumsticks, the marinade, dried goji berries, shiitake (optional) and water into a 1.4L saucepan.

3. Bring the mixture to a boil. Then cook over medium-low heat for 15 minutes or until the drumsticks are cooked through. 

4. Season to taste.

Shitake mushrooms make the soup taste full.

  2. Goji Berries... yes... I tried those too.for my health conditions, Those sweet, red berries seemed to help, but only during the time when I consumed them. I don't want to take a drug for the rest of my life, so why would I want to take a natural supplement everyday for the rest of my life (although Goji berries are very tasty and are highly nourishing). To me this was not a cure either (and I'm LOOKING for the CURE).
