Garlic Quinoa

Because of my pregnancy, my husband and I now study the nutrition labels when we do grocery shopping. Quinoa has been our new favorite as it is high in dietary fiber, thus slowing digestion and allowing more time for nutrient absorption. It is also fluffy and chewy at the same time, making the texture of a dish more interesting.

Food Remedy for Colds: Chicken and Shiitake Congee

It has been pouring rain the whole winter here in San Francisco - and the whole Bay Area. I guess the unpleasant weather is not so good for our body, and many of friends have been sick recently. Of course, you can go to the doctor and take the medication right off. But sometimes you want your body to heal faster, or it has just begun and you want to nip it in the bud, or maybe you are pregnant and try to avoid any medications. Or you simply want to have something delicious for lunch. Try this chicken and Shiitake Congee! 

NUTRIENTS

  • Ginger has been known for reducing nausea, soothing the digestive system, and helping treat colds or flu. Shiitake mushrooms help regulate the immune system. 
  • Chicken (or other protein) rev up the immunity. 
  • According to Chinese medicine, fuzzy melon is a "gentle" kind of food and is suitable for everybody, including those who are ill.
  • Garlic and green onion kill germs.

Shanghainese Noodles with Mustard Greens and Pork 雪菜肉絲麵

A few weeks ago, I ordered a bowl of Mustard Greens Noodles at a Shanghainese restaurant but was not satisfied at all. The sesame oil was too strong and made me sick (literally)... Craving noodles, I decided to make it myself. To my surprise, I found some quality Shanghainese noodles in a Chinese supermarket! Now that I have my own perfect noodles, I don't think I will order it at any restaurant again.

Bandits' Chicken Wings 土匪雞翼

Chicken wings have always been one of my favorites. When I was young, Mom cooked wings with BBQ sauce, coke, soy sauce, etc, and I loved them all. About ten years ago, Tam Jai Yunnan Noodles (譚仔雲南米線), a noodle chain, became popular in Hong Kong. Their Bandits' Chicken Wings was one of their most popular side dishes and one of my favorites too.

Now that I'm in North America with no Tam Jai around, I have to cook these wings myself. I have actually cooked for my friends too, and they all loved it!

Ground Pork Congee

Congee (or rice porridge) makes a good breakfast. My mom used to put all ingredients into the slow/pressure cooker at night before she went to bed. Then, the next morning, the congee would be ready! Isn't it convenient? 


I love eggs. That's why you find a boiled egg in my congee.


In the recipe below, I use chayote (also called vegetable pear, pear squash, christophene, cidra, sousou, 合掌瓜, 佛手瓜, etc) because I have fallen with love with the sweet fruit recently. You may use winter melon or cabbage ("juicy" vegetable) instead.

Clam Chowder

Ingredients: 
Potatoes, peeled & diced: 2 cups 
Celery, diced: 1 cup 
Yellow onion, chopped: 1/2 cup
Clams in juice: About 500g (About 3 cans of 6.5oz chopped clams)
Clam juice: 1 cup (~1 bottle)
Bologna, chopped: 2 pieces 
Butter: 2.5 tablespoons
All-purpose flour: 2 tablespoons
Milk: 2 cups
Salt: 1/4 teaspoon
Black pepper, ground: to taste

My Easy Pad Thai

I just felt like having Pad Thai today. 

Not having the Thai ingredients at home, I decided to cook my own style of Pad Thai. How about Korean glass noodles? Positive. It was easy to prepare and the noodles were soft and chewy.

Hong Kong Snack: Shark's Fin in a Bowl

Shark's Fin in a Bowl (碗仔翅) was one of my favorite afternoon or late-night snacks when I was in secondary school. To be exact, I loved to have Shark's Fin & Fish Paste in a Bowl (魚肉翅). People used glass noodles (粉絲) as the fake shark's fin, but more and more restaurants are using imitation shark's fin instead. 

The imitation shark's fin was on sale. That was why I bought it and made the soup today.

Delicious Lamb Loin Chops Ready in 10 Minutes



Hubby and I have been in San Francisco for five months already. Have been invited to several homes, and enjoyed wonderful meals with our new friends. We had several simple steak dinners, a big thanksgiving dinner, a typical western dinner, some hot pots, and a Vietnamese spring rolls dinner. One of our latest favorites is lamb, no matter how it is cooked - whether it is sliced lamb in hot pots, or lamb loin chops. 

The special taste of lamb makes seasoning super easy. Plus, I enjoy having the original taste of our food. I decided to season my lamb loin chops with only a few spices. To my surprise, the simple dish lured me into eating more and more. (Hubby said the lamb was so juicy and tender. The recipe was a success!)
