My Easy Pad Thai

I just felt like having Pad Thai today. 

Not having the Thai ingredients at home, I decided to cook my own style of Pad Thai. How about Korean glass noodles? Positive. It was easy to prepare and the noodles were soft and chewy.

Cook time: 10 min 
Total time: 20 min 
Yield: 2 servings 


Ingredients: 
Korean glass noodles: 200g
Apple cider vinegar: 2 tablespoons 
Brown sugar: 4 tablespoons  
Garlic, minced: 3 cloves 
Roasted peanuts: 1/2 cup 
Shrimps, unpeeled: about 10
Ground dried chili pepper: 1 tablespoon (Decide how spicy you want!)
Vegetables: 1 cup 
Egg, beaten: 1 or 2 

Directions: 

  1. Cook glass noodles in boiling water for about 10 minutes. Rinse the noodles with running water, drain then set aside. 
  2. Mix apple cider vinegar and brown sugar in a small bowl.
  3. Heat 2 tablespoons of cooking oil in a pan. Fry shrimps over high heat with garlic, peanuts, and chili pepper. Set them aside when all the shrimps turn pink.
  4. Heat 2 tablespoons of cooking oil in a pan. Fry vegetables until almost done. Then add the glass noodles. Stir in the sugar-vinegar mixture.
  5. When the mixture in the pan absorbs most of the water, push noodles aside in the pan and pour in the beaten egg(s). When the egg is almost cooked, stir it into the noodle mixture. 
  6. Add salt to taste. Serve hot.
