Bean Curd Dessert Soup 腐竹糖水

Another easy-to-make dessert soup is Bean Curd Dessert Soup (腐竹糖水) (Cantonese pronounced as foo joke tong shui).

Bean curd dessert soup tastes best when it is sweet enough 


Prep time: 60 minutes
Cook time: 30 minutes
Total time: 90 minutes
Yield: 3-4 servings

Ingredients:
Dried bean curd sheet, shredded: 1 cup
Water: 4 cups
Yellow rock sugar: 2-3 regular pieces
Egg, beaten: 1



Directions:
  1. Soak shredded dried bean curd in cool water until softened (about 1 hour). 
  2. Boil water in a pot. When it boils, add bean curd.
  3. Cook over medium heat for 20 minutes.  
  4. Turn heat to medium low and add yellow rock sugar (start with one or two pieces) according to your taste. Cook for 10 minutes.
  5. Turn off the heat. Stir in the beaten egg. Serve hot or warm.
