<li>Pan-fry wings on medium heat until brown.</li>
<li>Bake for 10 minutes.</li>
<li>Brush wings with honey. Turn over. Brush the other side with honey. </li>

So, of course, steamed egg is one of my favorite dishes. I can have my lunch or dinner with just steamed egg and a small bowl of rice.<br />

Steamed egg is simple but may not be easy to make. I was lucky to have learnt the trick before I made my first steamed egg. I have never failed — not even once. And I would like to share the trick with you.<br />

<li>Boil water in the steamer. </li>
<li>Crack eggs into a large bowl. Use the egg shell to add warm water into the bowl. <span style="background-color: #fce5cd;">[*Warm water is used for smoothness.]</span> <b>Egg/water ratio is 1:1.</b> That means after you crack 3 eggs into the bowl, add water with volume of about 3 eggs into the bowl. Add salt to your taste. Mix well.</li>
<li>Pour the mixture into a shallow dish. [You may oil up the dish before pouring in the mixture for easier cleaning later.] </li>
<li>Cover the dish with plastic wrap (so that the steam cannot affect the smoothness of the egg surface).</li>
<li>When the water in the steamer boils, put the dish into the steamer. </li>
<li>Cook over low heat for 12 minutes. </li>
<li>Turn off heat, and let stand for a few more minutes.</li>
<li>Serve hot with soy sauce. [*Cold soy sauce can immediately ruin the hot egg surface. You may take out the amount of soy sauce you need earlier, or pour it slowly on the edge of the dish.]</li>
<li>Sprinkle with green onion (optional) for decoration.</li>

When I was young, Mom used to cook this sweet green bean soup (pronounced as <i>look-dau-sa</i> in Cantonese) every summer. We had it hot, right after it was cooked. Then, Mom kept some in the fridge and some in the freezer. The cold soup and the popsicles were as good as the hot soup!<br />
<br />
According to the Chinese medicine, green mung bean has a cooling effect and can relieve the internal heat in your body. I guess that is why it is such a popular summer dessert in Hong Kong.<br />

<li><b>Dried seaweed:</b> Soak seaweed in water for 20-30 minutes.</li>
<li>Add green mung beans and water into a pot. Cook over medium heat for 30 minutes. </li>
<li>When the beans are mushy, turn heat to medium low and add yellow rock sugar (start with one or two pieces). Cook for 15 minutes.</li>
<li>The dessert soup can be served hot or cold. If you like it cold, just put the soup in the refrigerator after it is cooled down.</li>

Therefore, my recipe does not include marinade and there is no preparation time needed. If you want, you may marinate the pork briefly (for about 10 minutes) with a little salt (or soy sauce), sesame oil, and cooking wine. You may also notice that sesame oil and red chili pepper are both optional. I just don't want my noodles to have a flavor that is too strong, which will kill the tastes of the pork and mustard greens.</span><br />

<li><span style="font-family: "trebuchet ms" , sans-serif;">Add noodles when the water boils. Cook according to the instructions on the package (about 3 minutes). Stir and separate the noodles for even cooking and to avoid sticking. </span></li>
<li><span style="font-family: "trebuchet ms" , sans-serif;">Drain the noodles and run them under cold water for better texture. Drain again and put the noodles into soul/noodle bowls or a big serving bowl.</span></li>
<li><span style="font-family: "trebuchet ms" , sans-serif;">Heat a big skillet on medium high heat with a little oil. Stir fry the pork until almost all is brown. Drain the mustard greens and add it to the skillet. Add sesame oil and red chili pepper (both optional). </span></li>
<li><span style="font-family: "trebuchet ms" , sans-serif;">Continue to stir and mix for a few minutes or until you smell the mouth-watering aroma. Add 6 cups of water to the skillet. </span></li>

Chicken wings have always been one of my favorites. When I was young, Mom cooked wings with BBQ sauce, coke, soy sauce, etc, and I loved them all. About ten years ago, Tam Jai Yunnan Noodles (譚仔雲南米線), a noodle chain, became popular in Hong Kong. Their Bandits' Chicken Wings was one of their most popular side dishes and one of my favorites too.</div>

Now that I'm in North America with no Tam Jai around, I have to cook these wings myself. I have actually cooked for my friends too, and they all loved it!<br />

<li>Mix all powders, pepper, sugar and salt in a big bowl. Then, add cooking wine, soy sauce, and oil. Coat wings with the mixture.</li>
<li>Put wings in a zipper bag or food storage container. Fridge for at least 30 minutes.</li>
<li>Preheat oven to 400*F.</li>
<li>Bake wings for 8 minutes. </li>
<li>Turn them over. Sprinkle with black sesame. Bake for 10 to 12 minutes (depending on the size of the wings). Serve hot.</li>

<li><span style="font-family: "trebuchet ms" , sans-serif;">Dissolve water chestnut starch in 5 tbsp of water. Add it slowly to the pot. Stir well.</span></li>
<li><span style="font-family: "trebuchet ms" , sans-serif;">Turn off the heat when the soup boils again. Stir egg into the soup. </span></li>
<li><span style="font-family: "trebuchet ms" , sans-serif;">Add salt to taste. Serve hot with <span style="background-color: #fff2cc;">red vinegar / Chinese vinegar (淅醋), white pepper and/or sesame oil</span>, according to personal preference.</span></li>

Have been invited to several homes, and enjoyed wonderful meals with our new friends. We had several simple steak dinners, a big thanksgiving dinner, a typical western dinner, some hot pots, and a Vietnamese spring rolls dinner. One of our latest favorites is lamb, no matter how it is cooked - whether it is sliced lamb in hot pots, or lamb loin chops. </span><br />

<span style="font-family: Trebuchet MS, sans-serif;">The special taste of lamb makes seasoning super easy. Plus, I enjoy having the original taste of our food. I decided to season my lamb loin chops with only a few spices. To my surprise, the simple dish lured me into eating more and more. (Hubby said the lamb was so juicy and tender. <li><span style="font-family: Trebuchet MS, sans-serif;">Heat 1 tablespoon of vegetable oil in a pan over high heat.</span></li>
<li><span style="font-family: Trebuchet MS, sans-serif;">When the oil is very hot, sear the meat on all sides (about 2-3 minutes on each side).</span></li>
<li><span style="font-family: Trebuchet MS, sans-serif;">Remove the lamb chops from heat. Cover with foil, and let it rest for 5 minutes before serving. </span></li>

It closed its last two shops in Hong Kong on <a href="http://asiancorrespondent.com/17384/in-davao-goodbye-hardees/" target="_blank">December 27, 2006</a>. Within 16 years, Hardee's left in my heart a few signature foods - curly fries, Texas Spaghetti and Mushroom Rice. I would say Hardee's was quite a success, as my mum didn't like fast food yet she wouldn't mind taking us to Hardee's.</span><br />

<span style="font-family: Trebuchet MS, sans-serif;">Since I moved to North America (first Canada, then San Francisco), I have had more time for cooking. I looked for the recipe for my Texas Spaghetti but it was nowhere to be found. I also looked up Hardee's menu and finally realized what we had was a special Hong Kong menu! Lucky us! </span><br />

The taste brought back a lot of fond memories I had with my mum (especially because we both loved spaghetti). (The best time is probably one minute less than is indicated.) [Here, you may run the spaghetti under cold water to stop cooking and avoid sticking. Or skip this cold water step so that the spaghetti will absorb the sauce better.] Drain and set it aside. </span><br />

<span style="font-family: Trebuchet MS, sans-serif;">3. In a skillet heat olive oil over medium heat until hot. Add onion and cook until translucent.</span><br />

<span style="font-family: Trebuchet MS, sans-serif;">4. Brown the meat. Add butter and mushroom halfway through.</span><br />

<span style="font-family: Trebuchet MS, sans-serif;">5. Add tomatoes, tomato soup and golden mushroom soup. Cook until it bubbles.</span><br />

<span style="font-family: Trebuchet MS, sans-serif;">6. Pour half of the mixture into the casserole. Then, </span><span style="font-family: 'Trebuchet MS', sans-serif;">add half of the cheese.</span><br />

<span style="font-family: Trebuchet MS, sans-serif;">7. </span><span style="font-family: 'Trebuchet MS', sans-serif;">Add the remaining mixture into the casserole, then the remaining cheese.</span><br />

<span style="font-family: Trebuchet MS, sans-serif;"><b>2) Tastier: </b>When you pan-fry the rolls, you have to add oil, which will unfortunately mask the aroma of the beef. My baked enoki beef rolls taste good because you will never miss the great taste of the beef. </span><br />

<span style="font-family: Trebuchet MS, sans-serif;"><b>3) Easier: </b>People always complain it is hard to make a good-looking enoki beef roll. Or the rolls often come loose when they pan-fry them. When you bake, you don't need to worry about wrapping the rolls too tight (or too loose), or about the more challenging pan-frying techniques. The rolls will just be heated evenly in the oven, and the beef will shrink slightly over heat, wrapping the enoki mushroom very well.

<span style="font-family: Trebuchet MS, sans-serif;">3. Place the rolls onto a baking sheet. Arranging them at least 1 inch apart on baking sheets.</span><br />

<span style="font-family: Trebuchet MS, sans-serif;">4. S<b>auce</b>: Add 4 teaspoons of water into a small bowl. Then, stir in oyster sauce, sesame oil, salt, sugar and corn starch. </span><br />

<span style="font-family: Trebuchet MS, sans-serif;">5. Bake in oven for 3 minutes. (Sauce is NOT added at this point.)</span><br />
